I’m such a breakfast person. It’s always been my favourite meal of the day, especially during the weekends when I have the excuse to shop and prepare all sorts of deliciousness! From poached eggs and veggie omelettes, to yogurt parfaits with fresh fruit, and home-made granola loaded up with spices, nuts and seeds. All enjoyed with my family and loved ones as we have a super lazy Friday morning.
But sometimes it’s just me in the morning. It’s the middle of the week with no one at home, and I haven’t started the day yet. I open the fridge hoping to find some leftovers, but there’s nothing in there to eat! Well, except for some random items… We’re talking about an egg, a small potato, half a green bell pepper, and the last bit of toast in the freezer. I check the pantry for some thyme and paprika, grab the last bit of butter and my favourite jam… Mine just happens to be apricot, I think it’s a match made in heaven for eggs other than orange marmalade.
Then it’s time for a super-fast and easy breakfast for one. Nothing is measured here, it’s really just a bit of this and that. If you keep your veggies diced up small, it’s like 10 min tops!
But the best part for me (other than devouring that egg in less than 2 minutes!) was eating out of that gorgeous baby blue enamel plate. I found it at a local coffee shop during my travels to the Oregon coast this year. It was less than 6 bucks, and I just had to pick it up for my growing prop collection.
