One of the highlights of the Al Islami Ramadan Campaign was getting together with all my fellow chefs from SCAFA, as we took the stage at the highly anticipated “Kitchen on Ice” event.
It was an absolutely fun, day-long event that featured us demonstrating the recipes to all our wonderful families, friends, and audience; getting them to watch, engage, and learn. I loved answering questions from the audience, and got to talk about the health-benefits of quinoa a couple of times (yay!) as my Chicken Casserole with Apricots and Prunes dish featured a healthier quinoa pilaf instead of rice dishes that are more commonly made in this region. It was also fun showing everyone how to make a pretty strawberry-rimmed mason jar for the Rice Pudding Parfait with Strawberry Compote & Granola.

Yes… A whole kitchen was built on a stage…
in the middle of the Dubai Mall Ice Rink!

The day also featured a fun cooking competition where I got to be one of the tasting judges. There were kids’ cooking classes, arts and crafts, a food tasting hub, and nutrition consultations by BBC Good Food Magazine.

All in all… a wonderful day spent doing what we love, surrounded by the ones we love.
